Ingredients
2 medium size eggplant/baingan
1 medium onion, finely chopped
3 medium tomatoes, finely chopped
1 tsp ginger garlic paste or 1 tsp ginger/ garlic finely chopped
1 tsp cumin seeds/jeera
1 tbsp chili powder (for spicy)
6-7 curry leaves
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 garam masala powder
2-3 tbsp oil
salt to taste

How to prepare:
1. Apply oil to eggplant/baingan and with the help of knife or fork make some cuts on it.
2. Roast the baingan on gas till it separates the skin.
(*note - after every 10 secs turn the sides of baingan to roast perfectly.)
3. Let it cool for sometime
4. Peel of the roasted skin from the top slowly.
5. After that, cut the roasted baingan into small pieces.
6. In a pan, put oil let it heats then add cumin seeds and curry leaves
7. Add chopped onions into the oil fry for 2-3 mins on high flame than add ginger garlic paste and fry for 1-2 mins.
8. Now add chili powder, turmeric powder, coriander powder, garam masala, salt(as per taste).
9. Then add chopped tomatoes and fry for 3-4 mins till the oil separates from pan.
10. Add roasted baingan into the pan and mix it well. Keep on low flame for 3-4 mins.
11. Garnish with chopped coriander leaves.
12. Serve hot with Roti/Chapati's.
